This cookie was inspired by my husband. Years ago, while on vacation, he ordered an apple pie that came with a little shredded cheese on the plate. The cheese wasn’t actually in the pie, just sitting on the plate. We didn’t quite understand it at the time, but it got us thinking about how much we love charcuterie boards, where fruit and cheese are paired together all the time.

When I was brainstorming new cookie flavors, my husband suggested pairing apples with cheese. I thought of incorporating cheddar into the shortbread dough to add savory notes to the buttery base, topped with a homemade apple pie filling. And this cookie works! It’s a perfect balance of sweet and savory with a rich, buttery shortbread base. It’s absolutely delicious and truly a must-try!
